Ingredients

  • Beef or Mutton Mince (Qeema) – 500g (with a little fat for juiciness)
  • Green Chilies – 3-4, finely chopped (adjust to taste)
  • Ginger-Garlic Paste – 1 tbsp
  • Salt – to taste
  • Tandoori Masala – 1 tsp or as per taste (for a smoky kick) Optional but recommended: Coal for dhuaan (smoke)

Method

  1. Mix It Up:In a bowl, combine mince, green chilies, ginger-garlic paste, salt, and paprika/crushed chilies. Mix well using hands until sticky and slightly elastic in texture (helps bind).
  2. Shape the Kebabs:Wet your hands slightly and shape into seekh-style or round patties — whatever suits your grill or pan.
  3. Smoke it (Optional but Authentic):Heat a small piece of coal until red hot. Place a small foil bowl in the center of the meat mix, put the coal in, and pour a few drops of oil or ghee. Cover for 2-3 mins for that signature Charsi dhuaan flavor.
  4. Cook It Up:Grill on a BBQ or pan-fry on medium-high heat for 6–8 mins each side until fully cooked and slightly charred.
  5. Serve:Garnish with lemon slices, Shangrila Imli Ginger Sauce, Shangrila Green Chilli Sauce, and naan/roti.
